Honey Mustard Chicken Thighs

Chicken is such a bland protein option when it's not prepared right. Some people (aka: my mom) over-bake chicken breasts without a lot of seasoning. They turn out dry and lacking flavor. I personally opt for bone in skin on chicken thighs because they cook up way less dry and tend to be much more flavorful due to their higher fat content. This honey mustard marinade takes the flavor profile up a few notches to create an irresistible taste combo. Give it a try. And let me know how it turns out if you do.

Ingredients:

  • 1lb. bone in, skin on chicken thighs

  • 3 tbsp grainy mustard

  • 2 tbsp honey

  • ½ tsp dried oregano

  • 1 tbsp olive or avocado oil

  • Salt and pepper, to taste

Directions:

  1. Mix all the ingredients of the marinade together in a bowl. Then coat the chicken and marinate it in the fridge for at least 30 minutes.

  2. Preheat oven to 350°F.

  3. Place the chicken on a baking sheet skin side down and cook for 18 minutes.

  4. Remove the chicken from the oven, flip it to the other side so the skin sides are facing up and bake for another 18 minutes.

  5. Double check that the chicken is done by using a meat thermometer to see if it's at least 165°F. If it's not, bake for a few more minutes.

  6. Remove the chicken from the oven and serve with your favorite side dishes.
