
Here's a gluten-free apple honey muffin recipe for hopes of sweet things to come. It's customary to dip apples into honey during Rosh Hashanah (the Jewish new year). But I combined the two ingredients into these cute and flavorful little muffins instead. Serve with some honey butter and these are a definite win!
Ingredients:
1 cup almond flour
¼ cup coconut flour
1 tsp ground cinnamon
½ tsp baking soda
A dash of sea salt
3 eggs
¼ cup melted coconut oil
¼ cup maple syrup
2 tbsp honey
½ honey crisp apple grated
½ honey crisp apple, coarsely chopped
More honey for drizzling over top
Directions:
Preheat your oven to 350°F.
In a large bowl, combine the almond flour, coconut flour, cinnamon, baking soda, and sea salt. Mix well until all the ingredients are incorporated.
Add the eggs, oil, syrup, honey, grated apple, and coarsely chopped apple pieces to the dry mixture. Mix until thoroughly combined.
Divide the mixture evenly into your muffin cups or muffin tin. Drizzle honey over the top of each muffin.
Place the muffins in the oven for 24-28 minutes, or until golden brown and cooked through.
Optionally, you can drizzle more honey over the top of them when you serve them. Or, even better, mix some unsalted grass-fed butter with some honey and top them with honey butter when serving.
