I'm snowed in today. So what better time than now to be a hermit in my house and spend the day making sweet Valentine's Day treats in my kitchen. You may have heard I love chocolate. I also love the benefits of collagen and the tartness of raspberries.
I'm trying to reduce my intake of processed foods. Especially ones that contain sugar. These fudgy little rectangles of deliciousness are made using honey and other good-for-you ingredients, so there's nothing icky in them. The collagen adds a boost of anti-aging protein. And the crushed freeze-dried raspberries add an aesthetic, bold pop of color. Try them and let me know what you think.
Ingredients:
½ cup melted coconut oil
½ cup creamy almond butter
½ cup raw cacao powder
3 scoops Vital Proteins collagen powder
3 tablespoons raw honey
½ teaspoon vanilla extract
A dash of sea salt
¼ cup crushed-freeze dried raspberries
Directions:
Line a 8in. x 8in. glass dish with unbleached parchment paper.
Place the coconut oil, almond butter, cacao powder, collagen powder, honey, vanilla extract, and salt in a saucepan over medium heat and stir until smooth.
Once well combined, pour the fudgy mixture into the dish and spread out evenly.
Sprinkle the crushed freeze-dried raspberries over the top.
Place in the fridge for at least two hours to chill.
Once solid, cut into desired size pieces and devour all on your own or share with your friends and loved ones.
