Chicken Salad Lettuce Cups



If you're looking for a healthy, quick, and satisfying lunch, these chicken salad lettuce cups are it!


This one is simple. You can buy a pre-cooked rotisserie chicken and shred it yourself. Or you can make your own. Either way, you'll need some shredded chicken for the filling of these lettuce cups.


Ingredients:

  • 3-4 large leaves of Bibb or butter lettuce

  • 1 cup shredded chicken

  • 1 stalk of celery, diced

  • Handful of diced red onion

  • 8 kalamata olives, sliced

  • 2 tbsp mayonnaise (I use Primal Kitchen brand)

  • A pinch of black pepper


Directions:

  1. Place chicken, celery, onion, and olives in a mixing bowl and add the mayo and pepper. Stir to coat all of the ingredients.

  2. Lay the washed and dried lettuce leaves out on a plate.

  3. Scoop the chicken salad mixture into each lettuce leaf cup and enjoy.
