Watermelon Salad with Honey Lime Vinaigrette



Did you know that National Watermelon Day is coming up on August 3? I don't know who decided to give watermelon its own holiday or why, but I'm all for celebrating it. This fruit reminds me of summer. I've paired it with cucumber, feta, mint, and a delicious honey lime vinaigrette to make this watermelon salad.


Ingredients:

  • 1 mini seedless watermelon, cubed

  • 1 medium cucumber, cut into small bites

  • ½ cup feta crumbles

  • ¼ cup mint leaves

  • Juice of one lime

  • 1 tbsp raw honey

  • 1 tbsp olive oil

  • 1 tbsp balsamic vinegar


Directions:

  • Place the cubed watermelon, cucumber bites, feta crumbles and fresh mint leaves in a large bowl.

  • Combine lime juice, honey, olive oil, and balsamic vinegar together in a jar and blend well. I used this handheld milk frother to fully blend it.

  • Pour the vinaigrette over the salad and toss well until fully coated.

  • Serve immediately or chill in the fridge and save for later.


Some notes: I chose to peel my cucumber for a softer texture. You can leave the peel on for added crunch and an extra pop of green. This dressing can be made separately and used on all kinds of delicious summer salads.
