Korean Beef + Kimchi Tacos
One time when I had a layover in Denver, I stopped for lunch at one of their restaurants and had some Korean beef tacos with kimchi. I vowed to recreate this recipe one day, and that day has come. I think the tacos I had at that restaurant were made from short ribs. But the store I went to was out of short ribs. So I used sliced top round instead. I think they turned out great.
